In Vineyard

100% Cabernet Sauvignon grapes grown from our own vineyards in Pramaggiore.  The vineyard is situated 25 – 40 metres above sea level with medium texture and clayey soil.  Sylvoz is the growing method used.

In Cellar

Red vinification of Cabernet Sauvignon grapes. Fermentation takes place on the skins in steel vats for 8-10 days at a controlled temperature of 24-26 °C. After racking off the wine is placed in concrete vats for 10-12 days, in which malolactic fermentation takes place. It then matures on the fine lees for approximately 6 months before bottling.

In Tasting

The colour is bright, shiny red with purple highlights.  The scent is intense with pleasant hints of fruit and vegetables on a delicately herbaceous background.  The flavour is dry and well structured, extremely fresh with elegant tannins and velvety softness.

Adaptable and versatile, this wine is delightful with many different dishes, from typical salamis to highly flavoured first and second meat courses.

Cabernet Sauvignon – Cabernet Sauvignon became internationally recognized through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet Franc. The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine’s aging potential.
DOC – stands for Denominazione di Origine Controllata (Denomination of Controlled Origin). DOC wine satisfy a defined quality standard, and be produced within the specified region. To qualify for DOC certification additional more stringent rules regarding permitted grape varieties, harvest yields, minimum ageing including use of barrels, minimum alcohol content, and other factors.
Ai Galli – The farm Azienda Agricola Ai Galli was built about the seventies and now is set in nearly 50 hectares of vineyards, which are all situated in the D.O.C. (controlled designation of origin) Lison-Pramaggiore production area. The production of a wide range of good wines has been more and more appreciated by wine connoisseurs. The awards won in the last years are not final achievements for the company, but a confirmation that the undertaken way is the right one.
Venezia – is by far the largest DOC in Veneto region. Venezia is the Italian name for the city of Venice. It is also of the wine DOC the area was granted in December 2010. Wines labeled as DOC Venezia appeared on shelves as of the 2011 vintage, and indicated a thoroughly modern, varietal-led appellation, well-tuned to the demands of the modern wine consumer.
